Hibernator Doppelbock
Hibernator is a classic German doppelbock brewed true to style, featuring notes of medjool dates, dark fruit, cacao nibs, and caramel. 7.9% ABV 20 IBU
Notes from the Brewer:
Doppelbock is a Bavarian specialty first brewed in Munich by the monks of St. Francis of Paula. The term “doppel (double) bock” was coined by Munich consumers. Monks drank Doppelbock for Lent as a form of sustenance during their period of fasting. Lent is a religious observance in the Christian faith that lasts for 40 days, during which believers traditionally abstain from meat and other rich foods. The monks needed a source of nutrition that would sustain them through the fasting period, and beer was seen as a suitable alternative to solid food. However, regular beer was not sufficiently nutritious, so the monks developed a stronger, more robust beer that would provide them with the necessary sustenance. Many doppelbocks have names ending in “-ator,” as a tribute to the prototypical Salvator. Our Hibernator Doppelbock, on that same note, is inspired and pays tribute to those traditional Monkish Doppelbock beers with an amber copperish color, 7.93% Alcohol by Volume and notes of caramel, dates and cacao provided by the hefty amount of highly kilned malt which developed those complex flavors and deeper colors, balancing it out with 20 IBU’s of hop bitterness.
Belgian Golden Strong
With inspiration from rare Belgian brews, this Belgian Golden Strong Ale was crafted with port wine-glazed golden raisins. The port wine and golden raisin character meets warming notes of bread and spice to create a unique sipping experience. 8.9% ABV 22 IBU
Notes from the Brewer:
For this beer we asked our prep kitchen for help. It was fermented with California raisins caramelized on red port wine processed here on our prep kitchen by Shane, made into a puree by Jason, to be later added into our most active fermentation phase directly to our fermentation tank at the pub brewery. Belgian Golden Strong Ale is a pale, complex, effervescent, strong Belgian-style ale that is easy drinking, light-bodied and features fruity and hoppy notes. You can perceive in this beer, complex fruity banana esters, moderate spiciness and moderate alcohol warmth and hop aromas that lay the ground for our Red port tannins, caramelized golden raisins, and delicate bread notes. High carbonation helps to bring out the many flavors and to increase the perception of a dry finish. It has 8.9% ABV and 22 IBU’s.
Saké Tsunami
This extremely unique experimental lager/saké hybrid was brewed with jasmine rice and saké koji spores to jump-start the fermentation, which was then finished with lager yeast. It features notes of sweet rice, hints of cantaloupe fruitiness and nuances of shiitake earthiness. 10.2% ABV 25 IBU
Notes from the Brewer:
This is a mixed fermentation beer where we combine saké brewing and beer brewing process. We start out our mash by cooking the rice in our mash tun, then mixing the rest of our grain bill along with enzymes to make our sweet wort more fermentable. Once we finish our brew, we then start the fermentation with kumamoto saké yeast, a traditional and highly influential sake yeast strain known for producing clean, fragrant, and fruity sakes, particularly the premium Ginjo style. After we have our sake fermentation going, we then must bring it down to lager temperature to add our lager yeast. After months of very slow fermentation and polishing, the result is 8.3% ABV, 25 IBU Imperial Lager/Saké Hybrid that has these sweet rice and cantaloupe notes, harmoniously blended with those Sorachi Ace Hops soft herbal dill notes that were made a staple on Japanese Rice Lagers.

Bourbon Barrel Aged Cabin Fever
Maple syrup, cinnamon, and vanilla beans combine to make this imperial spiced brown ale an incredible holiday brew. This version is even more special with the added notes of oak and whiskey from the year plus it spent aging in bourbon barrels. 10.85% 30 IBU
Notes from the Brewer:
This is an Imperial Brown Ale aged in 7-year Wild Turkey Bourbon American Oak Barrels. For this beer we use maple syrup, speculoos cookie spices and vanilla. From the Wild Turkey barrel, we get sweet citrus notes, cinnamon and good amount of oakiness to complement the baked goods side of the beer. Speculoos cookies originate in Europe from the low countries (Belgium and the Netherlands), were originally a luxury item linked and have a long history tied to Saint Nicholas Day festivities. They are a type of spiced cookie with a flavor profile similar to gingerbread but with a more aromatic spice blend rather than heat. This beer will go great with crumbled pie and or Vanilla Ice Cream.

Amarone Barrel Aged Sour Golden Dall
This tangy, sour version of our award-winning Golden Dall Belgian Tripel was aged for 15 months in an Amarone wine barrel. The Amarone barrel imparted subtle red wine fruit notes such as plum, black cherry, and fig, along with woody oak barrel nuances of baking spice and vanilla. Only 338 bottles of this rare sour tripel were produced. 10.7% ABV 32 IBU
Notes from the Brewer:
Amarone Sour Golden Dall looks and smells like wine if you were to mix a tart dry white and tannin forward red wine. You get French Oak on the nose, plum and raspberry jam like notes, slight acetic acid, green apple elements along with better dose of lactic acidity. Light warmth. Very delicate attributes that blend effortlessly together, nothing overwhelms the rest, all in its right place. It has this Peach hue that makes for a great presentation for this very special beer.
Amarone is a dry, intensely flavored red wine from Italy’s Veneto region, made from dried grapes in a process called appassimento. It is known for its high alcohol content, full-bodied and warm profile, and rich flavors of black cherry, jam, and spices.
Tawny Port Barrel Aged Seward’s Folly
A decadent transformation of our bold Seward’s Folly Russian Imperial Stout, this special release spent over 15 months resting in tawny port wine barrels, emerging with luxurious flavor and depth. velvety notes of milk chocolate-covered peanut brittle, oak, and caramel mingle with a delicate sweetness of honey-drizzled cherries, to create a sensory experience both rich and refined. 11% ABV 65 IBU
Pinot Noir Barrel Aged Seward’s Folly
Brewed to commemorate the infamous deal between Russia and the United States that created Alaska, this exceedingly rare expression of just 352 bottles was aged for over 32 months in pinot noir barrels, creating a jet black flood of raspberry and plum pinot noir fruitiness, oaky spice, and a hint of vermouth complexity, melded with espresso and fudge.
