The Song of the Sky Trumpet On cold winter nights, these haunting sounds echo mysteriously through the streets of Anchorage. Are they mechanical noise from snowplows or the airport? Are they a natural phenomenon caused by the wind blowing through the peaks of the Chugach Mountains? Some even contend that they are the mating calls of whales in the Turnagain Arm. Or are they the sinister songs of wayward spirits? We may never know their origin but these Sky Trumpets inspired us to create Apocalyptic Sky Trumpet. This barleywine took home the first place prize for Best Barleywine in Alaska at the 2023 Beer and Barleywine Festival, Alaska’s most prestigious beer award. 2024’s Apocalyptic Sky Trumpet release drops on Saturday, March 2nd at our Downtown Anchorage Pub when we open at 11am. Bourbon barrel-aged for over 18 months, 2024 Apocalyptic Sky Trumpet oozes with notes of sticky toffee candy, cinnamon spice oakiness, toasted caramel, and deep dried Medjool date sweetness. It should also age beautifully for years to come if you stock your cellar with it. Limit of 6x 8oz cans per person per visit.

Cook Time: 3 hrs
Servings: 6

Ingredients:
2 tbsp olive oil
2.5 lb boneless beef chuck
3/4 tsp each salt and black pepper
3 garlic cloves, minced
2 yellow onions, chopped
6 oz bacon, diced
3 tbsp flour
1 14 oz can Nitro McCarthy Stout
4 tbsp tomato paste
3 cups beef or chicken stock
3 carrots, peeled and cut into 1/2″ thick pieces
2 large celery stalks, cut into 1″ pieces
2 bay leaves
3 sprigs thyme

Instructions

  • Cut the beef into 2″ chunks. Pat dry then sprinkle with salt and pepper.
  • Heat oil in a heavy-based pot over high heat. Add beef in batches and brown well all over. Remove onto plate. Repeat with remaining beef.
  • Lower heat to medium. If the pot is looking dry, add oil.
  • Cook garlic and onion for 3 minutes until softening, then add bacon.
  • Cook until bacon is browned, then stir through carrot and celery. 
  • Add flour, and stir for 1 minute to cook off the flour.
  • Add Nitro McCarthy Stout, chicken broth/stock and tomato paste. Mix well, add bay leaves and thyme. 
  • Return beef into the pot (including any juices). Liquid level should just cover.
  • Cover, lower heat so it is bubbling gently. Cook for 2 hours – the beef should be pretty tender by now. Remove lid then simmer for a further 30 – 45 minutes or until the beef falls apart at a touch, the sauce has reduced and thickened slightly.
  • Adjust salt and pepper to taste. Remove bay leaves and thyme.
  • Serve with creamy mashed potatoes and a glass of Nitro McCarthy Stout.
